Manor Estate 2009 Merlot Limited Reserve.
The winemaking process begins by removing all stems from the grapes to decrease the tannin level and bitterness of the wine. The grapes are fermented with the skins on, which produces the rich red colour of the wine. Merlot grapes have a thinner skin than other red wine grapes and also naturally has a lower tannin level. Tannin levels in the Merlot are distinct from acidity and are experienced through touch and texture, and the acidity as a flavour. During fermentation the skins are pushed down three times a day to keep them wet. The time spent in skins is 17-20 days to produce a softer finish. Following the fermentation process, the Merlot is aged in French oak barrels until the time of bottling which allows more tannins to add to the wine.

Merlot produces lots of bouquet, savour, and softness. Manor Estate’s Merlot is a medium bodied, vibrant style of red wine with lifted plum and dried herbs and spices flavours. Velvet red in colour, with a delightful balance of cassis character and soft tannins offering a smooth tasting to the last drop. This Merlot offers that familiarity while surprising the palate at the same time.
